Food and Wine Matching Tip of the Week

I hadn’t been in the mood for reds with the warmer weather causing me to crave a well chilled glass of white or Rosé, and then the other night the food I was eating absolutely demanded a quality red.

The Calicanto is the ultimate classic Bordeaux blend with that increasingly essential New World twist, making use of the often forgotten Bordeaux varietal Carmenère. A blend of Cabernets Franc and Sauvignon, and that gorgeous tobacco smoked Carmenère, the Calicanto boasts a bold and vibrant blackcurrant palate that is juicy yet restrained and sophisticated. The food I matched it with is along similar lines:

Pork and Red Onion Sausages, with Potato Dauphinoise and Red Onion Gravy. The richness of the meat and the gravy along with the mature cheese and texture of the potatoes is complemented delightfully by the silky yet robust texture of the Calicanto, which marries the food and wine with its enveloping yet supple smoky persona.

I simply could not get enough of this food and wine match – the food begs for the wine and the wine cries out for the food. Nothing less than sumptuously harmonious, and most importantly it won’t break the bank!

If you’d like to experiment the Calicanto is also very well suited to duck, venison, or fillet of beef.
